
I saw this post languishing in my drafts folder yesterday, not quite sure why. It’s been so long I can’t even remember when I made it! Essentially a sister to the buttermilk scone recipe I posted a while back, this version has savoury additions of cheese and thyme so I felt it was more appropriate to use its American name, biscuit.

Ingredients
1 1/2 cup (190 g) plain white flour
1/2 cup (60 g) plain wholemeal flour
2 1/2 tsp baking powder
1/4 tsp bicarbonate of soda
1/2 tsp sea salt
6 tbsp (85g) unsalted butter
1 cup (115 g) grated cheddar cheese
2 tsp dried thyme
2/3 cup (160 – 170 ml) buttermilk
1 tsp milk

Preheat oven to 220℃ and place a parchment paper-lined tray in the oven. Sift into a large bowl the flour, sugar, baking powder, bicarbonate of soda and sea salt. Add any bran that has been sifted out back in the bowl. Cut the cold butter into large pieces and add to the bowl. Rub the butter into the flour mixture, or use a pastry cutter to cut it in until the mixture resembles small peas. Stir in 3/4 cup cheese and 1 1/2 tsp thyme. Make a well in the centre and stir in enough buttermilk with a fork until it forms a soft but not sticky dough. Gather together the dough and knead very lightly on a floured board. Pat the dough out until 2.5 cm thick, fold in half, and pat out again until 2.5 thick. You can use a cutter or simply cut the dough cleanly into 4 cm squares. Brush tops with milk and sprinkle with remaining cheese and thyme. Place on preheated tray and bake for 10 to 12 minutes until tops are very light brown. Makes around 16 biscuits and some mis-shapened extras.

yuko: I don’t think the cheese melted properly. Maybe it’s not a melting cheese but I love its orange hues. Saw daisies in the field the next day after the snow. I think everything’s OK!
