tamami

This is her fifth year trading at Broadway Market and Tamami has worked out an efficient timetable to get everything ready from the kitchen of her North London home.

tamami

On Thursdays, she starts making chocolate truffles in the morning. This takes around five hours and she also prepares tart dough to chill for baking the next day.

Watching Tamami’s swift and confident movements, I would never have guessed that her knowledge and skills are self-taught, guided by passion and honed by practice.

Thank you Tamami for letting me into your days.

Replies

Nathalie (via contact form): You’re very welcome. How was Soseki? I’ve been curious.

ClaraAnne, Su-Lin, Jennifer, Liana, yz, Yuko, Lady, Karen, X., : Here is more information about the pineberry. The fragrance was like pineapples but the taste only came through strongly when the fruits were kept for a few days and got very soft. I prefer strawberries though.

sophie: I wish they’d have longer opening hours!

Kitty: Sorry to confuse… I had Japanese food at Life and the pancakes were from The Diner.

Jia: I’ve only been once but most definitely recommend the simpler styles of udon. Next time, I’d like to try zaru-udon with goma-dare.

Carole: I’ve been eating too much cake this weekend!

Megan: It’s turned wintry this week but I hope it will be sunny and warm soon again.

Yen, lucie, petoskystone, Tofu and Walter Helena Photography: I want to try to explore areas of London I have yet to go to, so hopefully more interesting randoms soon.

Anja: Sometimes I think it’s funny a slogan like that is on a product to be sold but it is rather nice.

LIU Huayin: 你有没有觉得David Cameron看起来滑头滑脑的,靠不住?我们这是没什么选择的民主票选。

SophieTakes Pictures: I’ve used all sorts of films actually. I find that the labs matter more than what films were used. My results differ dramatically from lab to lab and I’ve finally settled on two I trust. You’ll have to ask for no corrections as well otherwise they’ll be auto-balanced which result in highly-contrasted, highly-saturated effects. As for Superia, I’ve used it before and thought it was quite neutral. Recently I’m also using Fuji Sensia and Kodak Portra.

J.: The lyrics expresses so much in so little!

charlotte: OK food but wonderful location. I haven’t really been taken by the Oliver Peyton establishments I’ve tried.

bollettieri: I didn’t think the coins would cause so much fuss… They came with Visvim’s version of the penny loafer! I bought four things at the sale: Cacharel Liberty dress, Comme des Garcons Comme des Garcons padded trousers, Comme des Garcons Comme des Garcons hospital smock and Daniela Gregis tote bag. Lucky?

Sylee: That’s such a nice way of putting in. On the Northern line around Camden Town station sometimes, two trains would come really close while passing each other for a second. I always think of it as such a poignant moment.

read me…: I prefer strawberries! Koya is nice for a simple, soothing meal. Maybe you will start craving for it after you tried it. The Market was crazy even though I went for the preview day.

Sneaky Magpie: I really hope the cold spell is over soon. I had to turn the heating up again!

suzie: What do you recommend? I had fried tofu udon in soup with additional topping of onsen tamago.

Harriet: Thank you.
